Cime di Rapa, known in Canada as Rapini makes a great addition to many dishes, pizza and pasta being among my favourites. One of the best things to cook this vegetable with is sausage.
Here’s an easypeasy recipe that will take you no time at all to whip up.
Cime di Rapa
Pasta such as Spaghetti or Tagliolini
1 cup of pasta water
Chili pepper flakes (optional)
Boil cime di rapa (15-20 minutes until tender), then drain and set aside
Sautee chopped onions in a pan with oil, once translucent, add crumbled sausage and let brown
Add spaghetti to pot of salted boiling water
Toss sausage, cime di rapa in pan with olive oil and chili flakes if you like, then add pasta with one cup of pasta water and let simmer until water is absorbed.
